Double-Crust Lemon Pie

Mama’s Double-Crust Lemon Pie
Ingredients:
1¼ c. sugar
2 T. flour
1/8 t. salt
¼ c. soft butter
3 eggs (well beaten)
juice from 1½ or 2 lemons
2 unbaked pie crusts
Instructions:
Combine sugar, flour, and salt.
Blend in butter and mix thoroughly.
Add well-beaten eggs and blend until smooth.
Add lemon juice and blend well.
Pour into uncooked bottom crust.
Cover with uncooked top crust.
Sprinkle lightly with cinnamon and sugar
Timing:
Bake at 375 degrees for 10 minutes.
Reduce heat to 350 degrees and bake additional 40 to 45
minutes.
Throughout
the Christmas seasons in the 1960s, my mother baked orange-glazed pound cakes
to give to our neighbors and friends. There would be one of her delicious
delicacies waiting in the paper box for the lady who delivered newspapers to
our house and another one on our front steps for the man who drove the Pet Milk
truck.
My mother always placed others
before herself, and her selfless footprints left a servitude trail for her
children to follow. Our father, her husband of over 50 years, praised her, and
my two brothers and I rise up to call her blessed (Prov. 31:28).
Jesus said, “Whoever wishes to be great among you shall be your servant; and
whoever wishes to be first among you shall be slave of all. For even the Son of
Man did not come to be served, but to serve, and to give His life a ransom for
many.”

Who can you serve today?
“Do
you think Mrs. Robison would mind me visiting sometime?” I asked. “I’d like to
take her one of the primary books for Will. With help, I think he might learn
his ABC’s and maybe even learn to write his name.”
“Elsie,
that’s a wonderful idea,” Mrs. Graham said, her blue eyes sparking. I’ll go
with you and take Jessilee one of my famous deep-dish apple cobblers. Now,
let’s just let the angels dry these dishes and go see what Gladys and the girls
are up to.” 1
